WHere is a simplified version of a beverage featured on a new drinks list. It's a batch pre-mixed which is loaded with flavours associated with Christmas time, making it excellent for hosting a celebration. Any leftover citrus syrup to use in brunch beverages, puddings, or to mix another batch of this cocktail.
Bikini Recipe
Serves 10 people
To make the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Drink (produces 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Method
Making the Syrup: Put all the ingredients inside a pan, bring to a light boil, mixing until the sugar dissolves. Next, remove from the heat and leave to reach room temperature completely. Transfer to a sealable bottle, close it and store in the fridge, it can be stored for up to a month.
Preparing the Batch Mix: Mix all the liquids into one big jug, allow it to infuse for one hour, then pass it through preferably using muslin, making it perfectly clear.
To serve: Measure 85ml of the batch mix into your cocktail shaker containing ice, gently stirring gently for a minute until cold. Pour into a frosted cocktail glass or similar, decorate with some cranberries adding the final touch with a quick spritz of the essential oil over the drink.
